Marcala earned Honduras its first coffee denomination of origin. The region sits in the mountains of La Paz at elevations between 1,300 and 1,700 meters, in fertile clay soils that hold moisture and minerals through the dry season, producing beans that develop a sweetness and warmth that drier, lower-altitude growing regions spend years trying to approximate. When 1,500 grower-members from Cafe Organics Marcala are behind the sourcing, that reputation isn't marketing — it's operational.
Bourbon, Catuai, Caturra, Lempira, and Typica varietals — a diverse lot that contributes range to the cup's character. Fully washed and sun-dried, the processing preserves the natural sweetness of the cherry without the added fruit intensity of natural processing, letting the terroir and varietal speak clearly. The medium-dark roast brings those voices forward: caramel warmth upfront, brown sugar sweetness in the body, a hint of warm spice in the finish that closes round and full. Smooth. Satisfying.
