Dark Italian Roast — My Darkest. Wide Open Throttle, No Apologies.

Steve parks the motorcycle on the sidewalk right out front once in a while. Has since day one. Clients walk past it on the way in, and most already know what it means — this is a shop run by somebody who doesn't do anything halfway. The roast on this shelf runs on the same principle.

A slow-roasted fusion of specialty-grade Arabica and Robusta pushed all the way to a deep Italian finish — my darkest roast on the menu. The Arabica brings smooth dark-chocolate body; the Robusta adds raw strength, a heavier frame, and a caffeine load that doesn't ask how your morning's going. The roast runs dark, the crema runs thick, and the flavor runs bold without a word of apology.

One tip from behind the chair: brew this one cooler than you think — keep your water around 190°F and never past 200°. A roast this dark is already at the edge, and backing the heat off pulls all the body and chocolate without dragging out the bitterness. Short, hot enough, decisive — it pulls beautifully through an AeroPress and opens up clean and powerful in a Kalita Wave Tsubame. Give it a big mug that means business and stay out of its way.
